NewGreens® Energy Bites
- ¾ cup cup chopped pecans
- ½ cup chopped and pitted Medjool Dates packed firm
- 1-1½ cup tablespoons NewGreens® Original
- ⅛ cup chopped candied ginger
- ⅛ cup goji berries
- ⅛ cup vegan dark chocolate chips or chopped chocolate chunks
- ¼ tbsp ground cinnamon, optional optional
- ⅛ tbsp ground cardamom optional
- ⅛ cup dried shredded coconut
- ALL INGREDIENTS
- Place the pecans in a food processor and process until finely ground (but not pasty).
- Add the dates and NewGreens® and process well.
- Transfer to a bowl and add the ginger, goji berries, chocolate chips, and cinnamon and cardamom, if using, and Mix well.
- Form into 10-12 small balls and coat with dried coconut before serving.
Lasts for up to 1 week in a glass container in the fridge.
